Thai Chicken Lettuce Wraps...
In a medium bowl combine-1/4 cup soya sauce, 3Tbsp lime juice,2 tsp sugar,1/2 tsp grated lime zest,1 jalepeno,seeded and minced.
In a large skillet heat2 Tbsp vegetable oil,add 3 minced garlic cloves,add 3/4 pound minced boneless skinless chicken breasts, saute, add sauce & scallions minced,remove from heat, add shredded carrot & cilantro
Spoon mixture into romaine or boston lettuce leaves
Serve & sprinkle with crushed peanuts
Couscous Salad with Grilled Zucchini...
Put 1 cup couscous in a heatproof bowl & add 1 1/2 cups boiling water. Cover & let stand 5 minutes.
Dice one medium zucchini, drizzle with olive oil, grill until golden...
Add zucchini,1 minced garlic clove,chopped mint & cilantro,salt,pepper,jalapeno to taste
Toss & serve!
Spicy Steak Skewers...
Marinate 2 pounds 1" chunks of sirloin-5Tsp balsamic vinegar,1/4 cup olive oil,1 minced jalapeno,salt & pepper to taste...marinate for 2 hours
Cut red onion & green/red peppers into 1" pieces
Skewer the steak,onions & peppers
Grill until cooked through
